ingredients

4 x Simon Howie Bourbon Burgers

4 x brioche buns, (Gherkin Mayo)

4 x gherkins chopped,

1tbsp dijon mustard

4 tbsp mayo

(Maple Crispy Mushrooms) 250g Sliced Mushrooms, 2tbsp Maple Syrup, Salt & Pepper, Salad, Fried Onions.

Method

1. Prepare the gherkin mayo by mixing the chopped gherkins, dijon mustard and mayo together.

2. Set aside. Fry the mushroom slices in a little oil until crispy and add in the maple syrup and season with salt and pepper.

3. Fry up some additional onions and add some to the mushrooms if you wish.

4. Bake the burgers for 10 minutes in the oven at 160C and continue the cooking on a well-prepared BBQ for a further 10-15 minutes or until cooked through well.

5.  Slice the buns and load up with salad, fried onions, the burger, maple mushrooms and gherkin mayo on the top. Serve with fries or other BBQ sides!
