This is breakfast and then some! Home cooked waffles, made into a sandwich and filled with all your breakfast favourites. YES YES YES!!

ingredients

For the waffles

2 eggs

450g self-raising flour

2 tbsp golden caster sugar

500ml milk

100g butter, melted and cooled

2 tbsp sunflower or vegetable oil

For the rest

1 tin of Baked Beans

Method

  1. Crack the eggs and whisk. Add the flour and a generous pinch of salt. Add the sugar, then gradually whisk in the milk followed by the melted butter until smooth. Can be made 1-2 hrs ahead and chilled.
  2. Heat a waffle maker following the manufacturer’s instructions. Spoon in enough batter to just cover the surface. Or spoon the mixture just on to the middle of the griddles if you want to make rounder waffles. Cook following the manufacturer’s instructions (usually 5-6 mins) until the waffles are golden brown and crisp. Put in a low oven to keep warm
  3. Cook the bacon, sausages, black pudding and beans according to packet instructions.
  4. Place a waffle on a plate. Stack up you fillings. Top with another waffle and tuck in and enjoy a waffley good breakfast!!
