Haggis and Black Pudding Breakfast Wrap

Something a bit different for your weekend breakfast. Haggis, Black Pudding and Egg in a Wrap!

ingredients

1 large plain tortilla wrap

Simon Howie Classic Breakfast Haggis (1 slice per wrap)

Simon Howie Classic Breakfast Black Pudding (1 slice per wrap)

2 eggs, whisked and seasoned

Red or Brown Sauce as preferred

Method

  1. Place a slice of haggis and black pudding in a microwavable bowl. Cover with clingfilm, pierce film with a knife and microwave for 2 mins.
  2. Heat a large pan to medium heat. Add a knob of butter and once melted pour in the whisked eggs.
  3. Swirl the egg to cover the base of the pan and then leave to start to cook and firm. Once you can see the egg has started to through at the bottom but is still slightly runny on top place a wrap on top of the egg and press down slightly.
  4. Leave to cook for another minute and then test to see if you can successfully flip the wrap over with the egg layer attached.
  5. Once flipped add the haggis and black pudding and black pudding and top with your favourite sauce.
  6. Roll in the sides of the wrap to form a burrito shape. Flip and toast on both sides until golden.
  7. Serve and enjoy!
