Bacon, Avo & Spinach Breakfast Burrito

A super quick and easy breakfast burrito that tastes like something you would only expect when eating out! Execute the Tik Tok egg wrap hack and then layer up with your favourite fillings. Toast and enjoy!

ingredients

Simon Howie Smoked Streaky Bacon

Knob of butter

2 x Eggs per wrap

1 x Avocado

Small handful of spinach per wrap

Grated cheddar

2 x Large Plain Wraps

Hot Sauce

Method

  1. Cook the streaky bacon to your preference.
  2. Slice the avocado
  3. Whisk 2 eggs in a small bowl and season with salt
  4. Heat a pan to medium heat, add the butter and then pour in the whisked eggs. Swirl around a little to ensure the egg covers most of the pan.
  5. Allow the egg to set at the bottom but while still runny on top place one of your wraps on top of the egg to cover it completely.
  6. Wait a minute and then have a peak to see if you can successfully flip your wrap with the egg attached. If you can then do so.
  7. Add your fillings. I added cheese, the cooked bacon, avocado, spinach and topped with hot sauce.
  8. Fold up the sides of the wrap to form a burrito. Toast on both sides by turning occasionally until golden brown on both sides.
  9. Serve and enjoy!
