A quick and easy recipe for haggis and bacon ‘sausage’ rolls – perfect for picnics or finger food nibbles at parties.

ingredients

454g Simon Howie Original Haggis

2 rashers Simon Howie Dry Cure Bacon

320g puff pastry

1 egg, beaten

Method

1. Preheat oven to 200°C. Remove haggis from casing, chop into pieces and place in a microwaveable bowl.

2. Cover the bowl with cling film and microwave for 3 minutes. Peel back the film and mash the haggis slightly with a fork to break up the pieces, then cover again and return to the microwave for a further 2 minutes.

3. Roll out the pastry onto your work surface and cut the pastry in half length-ways. Spoon the haggis into the centre of each piece of pastry, ensuring that there is a consistent amount of filling in each.

4. Sprinkle on pieces of cooked bacon on top of the haggis. See our instructions on how to oven cook or microwave your bacon!

5. Use a pastry brush to wet the edges of the pastry with the egg wash. Roll up the pastry, brush all over with more of the egg wash and cut into pieces.

6. Place on a baking tray and cook in the oven for 10-15 minutes until golden brown.
