8 rashers of Simon Howie Bacon
1 sheet of ready-rolled puff pastry
8 long slices of cheddar cheese
Sweet Chilli Cream Cheese for spreading (optional)
1 egg, beaten
1. Roll out your sheet of pastry and divide into 8.
2. Spread a little of your cream cheese on each pastry square, and place a rasher of bacon and a slice of cheese diagonally on top of each, running from top left to bottom right or vice versa.
3. Fold in one corner of the pastry square, wet a little with the egg wash, then fold in over the second corner. Tightly pinch together so they don’t unfold in the oven, then brush with the remaining egg wash.
4. Pop in the oven at 200C for 15-20mins, or until deep golden and crispy. Allow to rest for a few minutes to help them become even crispier.
5. Serve up and enjoy!
