Viral Crispy Potato Salad with Crispy Bacon Bits

Yum Yum Yum. Where do I start!? Not only is this an absolutely delicious salad perfect for summer lunches and BBQs. The crushed roast potatoes that you make to use in the salad are going to be my go-to roasties from now on! Crushing them makes them so crispy and crunchy on the outside but still so fluffy and delicious on the inside! Perfect! Add crispy bacon bits and what more could you want?

ingredients

Half a pack of Smoked Streaky Bacon – chopped and cooked

1 x Small bag of new potatoes

1/2 Cucumber – chopped

2 tbsps of Greek Yoghurt

1.5 tbsps of mayo

juice of half a lemon

1 tsp of chilli powder

chives – chopped

 

Method

  1. Boil the potatoes until you can stick a fork in them (approx 10 mins)
  2. Add oil or goose fat to a baking tray and place in a hot oven (200 degrees)
  3. Drain the potatoes and carefully add to the hot oil in the baking tray.
  4. Return to the oven and cook for 10 mins.
  5. Bring the baking tray out of the oven and carefully use a glass to squish each of the potatoes – crushing them.
  6. Cook until golden and crispy, flipping as required.
  7. In a bowl combine all the other ingredients.
  8. Once the potatoes are ready, remove from the oily tray, pat dry, and add to the other ingredients.
  9. Combine and serve.
