While delicious with the traditional neeps and tatties, you don’t need to stick to the rules! We recommend mash, broccoli and lashings of gravy as a good alternative!
2. Place the haggis in a large pan of boiling water and cook according to the packet instructions or bung it in the microwave!
3. Cook the potatoes in a pan of boiling salted water for 20 to 25 minutes, or until tender.
4. Trim and roughly chop the spring onions. Melt the remaining butter in a pan, add the spring onions and cook for 1 to 2 minutes until softened. Mash the potatoes until quite smooth, add the spring onions, mix and season to taste.
5. Serve your mash with your cooked vegan haggis and maybe some broccoli and gravy and dig in!

1 Simon Howie Vegetarian Haggis (Vegan approved)
400g potatoes
50g butter
6 spring onions
