Veggie Haggis Quesadillas

Haggis is such a versatile ingredient and can easily be used as a cheaper and even tastier alternative to chicken, mince or Quorn.

These wegetarian haggis quesadillas would work with our normal haggis as well. But meat eater or not, give the veggie haggis option a go – it is sensational!

ingredients

1 x 454g Haggis

8 Tortilla Wraps

Scottish Cheddar (grated)

Salsa

Method

Remove the haggis from the packaging and casing and cook as desired. I always just microwave it for quick and easy dishes like this.

To microwave:

Chop the haggis in to chunks.

Place in a microwave bowl.

Cover with Clingfilm – pierce film.

Microwave for 3 mins.

Carefully remove film (watch out for hot steam) and mash the haggis with a fork.

Recover with the film and microwave for 2 mins.

Be very careful of hot steam second time around. Ensure haggis is piping hot throughout.

Heat a pan and heat a tortilla wrap on one side for 30 secs.

Flip it over and spoon hot haggis on to one half of the wrap.

Layer on cheese and salsa and fold in half.

Flip as required until golden brown on both sides.

Slice in to triangles and serve.
