Square Sausage Salad

Beef up this summer salad by adding chunks of square sausage! Use our Reduced Fat Steak Lorne for a lighter alternative for a healthier twist that doesn’t compromise on taste.

Serves: 2

ingredients

1 pack of Simon Howie Square Sausages (4 slices)

2 little gem lettuces

80g sun-dried tomatoes

80g cherry tomatoes, halved

80g mini mozzarella chunks

2 eggs, boiled

 

Method

1.  Wash and prepare the cherry tomatoes and lettuce and arrange on the two plates.

2. Fry or grill the square sausages as per the pack instructions.

3. Meanwhile, boil the eggs for serving on top of the salad. We find 6-7 mins is perfect if you like to leave the yolk a little sticky, but 8-10 will make sure it’s hard boiled!

4. Take the square sausages off the heat and slice into even chunks. Peel the boiled eggs and slice in half.

5. Add the square sausage pieces, mozzarella chunks and eggs to the plates and serve!
