Spicy Sausage Stuffed Pepper Pumpkins

ingredients

4 x orange bell peppers

1 x pack premium pork sausages 300g

Pinch of oregano

Pinch of paprika

Pinch of cayenne pepper

Pinch of salt

1 1/2 cups of cooked rice

60g grated mozzarella cheese

3 tbsp chicken broth

1 tbsp olive oil

Method

  1. Cook the rice then set aside to cool.
  2. Remove sausages from the casing, and place meat in a mixing bowl.
  3. Use a fork to break down the meat thoroughly.
  4. Add oregano, paprika cayenne pepper, salt…and whatever else you fancy throwing in! mix well.
  5. Heat a little oil in a pan, brown sausage meat and continue to break down and separate with a fork until cooked through.
  6. Add chicken broth to retain moisture and stir thoroughly.
  7. Remove from the heat and set aside in a large bowl, allow to cool.
  8. Add the cooked rice to the sausagemeat mixture and stir evenly.
  9. Preheat oven at 200c.
  10. Remove the top of each pepper, seeds and innards.
  11. Use a sharp knife to carve each pepper with a spooky Halloween face!
  12. Place peppers upright on a foil-lined baking tray.
  13. Drizzle with olive oil before roasting.
  14. Generously spoon in sausage & rice mixture.
  15. Cover with foil and roast for 35-40 mins.
  16. Top with cheese and finish cooking the peppers uncovered for the last 5-10 minutes.
  17. Remove from oven and serve up a spicy spooky dinner!
