Laurens Cravings Pigs in Blankets Marry Me Pasta

What’s more Lauren cooks the whole thing in one pot so not only is it delicious it’s simple to make too! Don’t take the internet’s word for it. It’s time to try making the pasta everyone has been talking about!

ingredients

2 tbsp Olive Oil

20g Butter

2 packs of Simon Howie Pigs in Blankets

1 Brown Onion (chopped)

200g Mushrooms (sliced)

1 tsp Paprika

1 tsp Mixed Herbs

3 Cloves Garlic (finely chopped)

2 tbsp Tomato Paste

70g Sun-dried Tomatoes (chopped)

150g Spinach

1 Chicken Stock Cube dissolved in 900ml Water

150ml Double Cream

30g Parmesan

300g Penne Pasta

Method

  1. Add olive oil and butter to a large pan, allow to melt, then cook the pigs in blankets until golden brown (you can also air-fry the pigs in blankets if preferred).
  2. Remove the pigs in blankets from the pan then soften chopped onion and mushroom with paprika and mixed herbs.
  3. Stir through garlic and tomato paste and cook for 2 minutes before adding spinach and sun-dried tomatoes to the pan.
  4. Pour over the chicken stock and the double cream and add the uncooked pasta.
  5. Simmer on medium/high heat for approx 15 minutes and the pasta will cook in the liquid whilst absorbing it (add a little more water if you think the pasta still has too much of a bite to it but the sauce needs ‘topped up’)
  6. Finally, grate in parmesan and add the cooked pigs in blankets on top of the pasta to serve.
