Up your veggie breakfast game with this recipe for our Veggie Black Pudding & tofu scramble. Trust us… it’ll be a veggie good start to your morning!
2 packs of Simon Howie Veggie Black Pudding
8 slices of your favourite bread
Tomatoes (optional)
1 avocado (optional)
For the tofu scramble
1 tbsp olive oil
450g block extra firm tofu
2 tbsp nutritional yeast
1/2 tsp salt, or to taste
1/2 tsp turmeric
1/4 tsp garlic powder
4 tbsp milk, or non-dairy alternative
1.In a large frying pan, heat the olive oil over a medium heat. With your hands, crumble chunks of the tofu in the pan and mash using a potato masher or a fork to your desired texture.
2. At the same time, fry or grill the Simon Howie Veggie Black Pudding as per pack instructions.
3. Fry the tofu scramble for 3-4 minutes, stirring often until any water has cooked out of the tofu. Add the nutritional yeast, salt, turmeric and garlic powder. Cook and stir constantly for about 5 minutes.
4. Pop your toast into the toaster or under the grill.
5. Pour your milk of choice into the tofu scramble pan, stir in well and remove from the heat.
6. Serve the scramble on your perfectly golden toast with your Simon Howie Veggie Black Pudding and optional sliced avocado and tomatoes or your favourite breakfast items!
