Pancake Stack With Bacon

ingredients
Simon Howie Smoked or Unsmoked Back Bacon
2 bananas
Maple syrup
150g plain flour
1 tsp baking powder
A good pinch of salt
2 tbsp caster sugar
150ml whole milk
1 large egg, lightly beaten
2 tbsp melted butter
Method
1. Take a large mixing bowl and sift in your flour, baking powder, salt and caster sugar.
2. Whisk the milk, egg and melted butter together in a jug.
3. Using a whisk or fork, beat the two mixtures together in your mixing bowl. It might take a bit of elbow grease to get the lumps out! You can get your frying pan heating up while you do this.
4. Drop a knob of butter into the frying pan and use a ladle to carefully portion out your pancakes in the pan. Give each pancake a few minutes. You’ll know when it’s time to flip them over when you start to see bubbles form on the surface.
5. While your pancakes are stacking up, put your bacon under the grill and get it cooking.
6. Peel and chop your bananas and set aside for once all the batter has been used up.
7. Serve, topped with bacon, banana and drizzled with honey. Enjoy!
