Homemade macaroni cheese
Simon Howie Smoked Streaky Bacon (cooked)
We have a pet Sourdough starter named Suzy who we used for this recipe. We loosely followed the BBC Good Food recipe for making Pizza dough. Who doesn’t love recipes from BBC Good Food! They also talk you through how to make your own Suzy, I mean starter, which I highly recommend – it’s easier than it sounds.
Once our dough was proved I cut it up into portions and rolled it into balls using Marshalls Semolina then left to prove again.
We shape our pizza dough out into bases and then give them a very quick fry as this helps to hold their shape while you pile on the toppings.
Once the pizza oven is hot and good to go. Spread passata over the base and cook for a minute until the sides start to crisp up.
Remove from the oven and pile on the macaroni cheese topped with extra grated cheese for good measure. I added the cooked bacon at this stage but it burnt so leave that off for now.
Return to the pizza oven and cook until the cheese has melted, approx another minute.
Remove from the oven, add the crispy bacon and serve immediately.
