Baked Eggs and Black Pudding

A delicious breakfast alternative using our well-loved Simon Howie Black Pudding!

ingredients

3 Medium eggs

200g Sliced Black Pudding

50g Parsley

50g Salted Butter

Salt and Black Pepper to season

Method

1. Pre heat oven to 200°.
2. Grease a casserole dish or frying pan using the butter.
3. Crack 2 eggs and whisk lightly using a fork in the casserole dish or frying pan.
4. Season with salt and black pepper.
5. Place in the oven for 5-10 minutes (until partially cooked).
6. Remove dish or pan from oven and crack a 3rd egg to the side to get the sunny side up look and crumble some black pudding and parsley across the dish.
7. Place in the oven for a further 10-15 minutes (until fully cooked.
8. Serve and enjoy with a glass of Orange juice and a slice of toast.😊
