Gluten Free Haggis Pizza

ingredients

150g Simon Howie Gluten Free Haggis

4 Genius gluten free pizza bases

1 tin chopped tomatoes

1 clove garlic, crushed

1 handful fresh basil leaves, stalks removed and reserved

Salt & pepper to taste

Pinch chilli flakes (optional)

1 small red onion, sliced finely

125g pack mozzarella, chopped into little cubes

50g crumbled feta cheese (optional)

2 yellow or orange baby peppers, sliced into circles

Olive oil for drizzling over pizzas

Method

1. Preheat the oven to 220°C/fan200°C/gas 8.

2. Make your tomato sauce by placing the tin of chopped tomatoes, crushed garlic, salt &
pepper, pinch of chilli flakes and basil stalks into a small frying pan. Simmer at a medium heat until the sauce thickens slightly. Remove from heat. Roughly tear in most of the basil leaves and use a handheld stick blender or liquidiser to blend the sauce.

3. Place the pizza bases onto one large or two medium baking sheets and top with tomato sauce spreading to the edges, then scatter on the cubes of mozzarella, crumbled haggis and slices of red onion. Place the pizzas into a preheated oven for 5-8 minutes until heated through and the cheese is melted and bubbling.

4. Remove from oven and serve sprinkled with crumbled feta, the remaining basil leaves roughly torn, slices of baby peppers and a drizzle of olive oil.
