A rack of pork, also known as a pork rib roast, is a beautiful cut of meat that includes the pork loin and back ribs. It creates an impressive presentation for dinner parties but is simple to prepare.

Rack of pork can be oven cooked in a shallow roasting pan, after being rubbed with a combination of olive oil and fresh herbs.

Heat oven to 240°C/220°C Fan/Gas Mark 9.

Cook the pork for 20 mins per 450g. Begin cooking at 240°C/220°C Fan/Gas Mark 9 for 20 mins, then reduce the heat to 200°C/180°C Fan/Gas Mark 6 and cook for 2 hours. Turn it halfway through to ensure even cooking and test it 10 mins before the end with a temperature probe. When the core reads 70°C, it is fully cooked.
