Pork fillets are the most tender of all the pork cuts and really versatile. Slice into medallions and fry for a quick, delicious meal, stuff and cook in the oven or use in a casserole.

Before cooking bring the meat up to room temperature for up to an hour. Season and sear on all sides in a medium hot frying pan with a little melted butter, then place in a pre-heated oven at 180°C and cook for 15 minutes. (Medium)
