The Wowie BLT

The BLT. Three letters that never fail to make our mouths water, this is our very own take on a legendary sandwich.

Prep time: 5 mins

Cooking time: 10-15

Serves: 1

ingredients

Simon Howie Smoked or Unsmoked Back Bacon

3 to 4 lettuce leaves

Crusty white bread

½ an avocado

1 tomato, sliced

1 small red chilli (deseeded)

Butter

Salt

Pepper

Squeeze of lime

Method

1. Fry, grill, microwave or oven bake your bacon to the desired crispiness (or not-so-crispy if that’s your thing).

2. Slice your tomato and set aside for later.

3. Cut your avocado in half and use a spoon to scoop out one side. Mash it up in a bowl, season with salt, pepper, thinly chopped chilli and a bit of lime if you like.

4. Shred your lettuce.

5. Butter your bread and once your bacon is cooked to perfection, stack those ingredients into a sandwich and serve.
